Skillet Beef Stroganoff with Egg Noodles

The secret to stroganoff isn’t the meat or the sour cream alone—it’s understanding that sour cream breaks and separates when it hits direct heat above about 160°F. This recipe uses a tempering technique: you’ll warm the sour cream gently in a small bowl off-heat, mixing in a splash of the pan’s hot broth first to acclimate it, then fold it in at the very end. This way, the sour cream becomes a luxurious coating rather than a curdled mess.
The beef itself cooks fast because you’re using a good cut sliced thin and cooked in batches—never crowding the skillet, which is how restaurants do it. You’ll sear the strips until they develop a caramel crust, then remove them and let the noodles absorb all the flavorful fond left behind. Heat 1 tablespoon olive oil in a large skillet over medium-high heat until wisps of smoke appear; working in two batches, sear the beef 2-3 minutes per side until a deep brown crust forms, then transfer to a plate.

Add the remaining 1 tablespoon oil to the same skillet and sauté the onion and mushrooms over medium-high heat until the mushrooms release their liquid and turn golden brown, about 6-7 minutes.
