No-Knead White Sandwich Loaf
A soft, pillowy loaf that comes together in one bowl with just time and patience—no mixer, no kneading, no fuss.
This loaf exists because good bread doesn’t require effort, only hours. You’ll mix flour, water, salt, and a whisper of yeast in a single bowl, then let time do the work. Overnight, the dough ferments slowly in the cool, developing flavor and structure through what bakers call autolysis—the flour hydrating itself, gluten building without your hands. What seems like nothing happening is actually everything.
When you unfold the dough the next morning, it will be puffy and alive with bubbles. A brief fold or two reorients the gluten strands, then another short rise. Finally, you’ll shape it gently into a sandwich loaf and bake it in a covered Dutch oven, where steam keeps the crust tender and the crumb impossibly soft. This is sandwich bread that tastes like it took all day, because it did—you just weren’t there for most of it.
No-Knead White Sandwich Loaf

Mix flour, water, salt, and yeast in a large bowl with a fork or wooden spoon until no dry flour remains and the mixture looks shaggy and wet—about 2 minutes of stirring.

Cover the bowl with plastic wrap or a damp towel and leave at room temperature overnight or for 12 to 16 hours, until the dough has roughly doubled, smells yeasty, and is covered with bubbles.

Fold the dough over itself 3 or 4 times, reaching under and bringing it up and over, rotating the bowl as you work—it should feel billowy and offer little resistance, taking about 30 seconds total.

Cover again and let rest for 2 hours at room temperature until puffy and jiggly.

Turn the dough out onto a lightly floured surface and shape it into a rough rectangle, then roll it snugly from one short end, sealing the seam with the heel of your hand as you roll.

Place the shaped dough seam-side up into a banneton or bowl lined with a floured kitchen towel, cover loosely, and let rise for 45 minutes to 1 hour until it holds a gentle indent when you press it lightly with your finger.

While the dough rises, place a Dutch oven with its lid inside your oven and preheat to 500°F for at least 30 minutes.

Carefully turn the dough out seam-side down onto parchment paper, score the top in a single long slash with a sharp knife or lame, and transfer (still on parchment) into the screaming hot Dutch oven.

Cover with the lid and bake for 20 minutes until the steam has condensed inside and the dough is set but still pale.

Remove the lid and bake for another 22 to 25 minutes until the crust is deep golden brown and the loaf sounds hollow when tapped on the bottom.

Cool on a wire rack for at least 30 minutes before slicing—the crumb will set as it cools.
